One remarkable study highlighted that caffeic acid can reduce the production of aflatoxins by more than 95%, outperforming other antioxidants. This finding indicates that caffeic acid can effectively mitigate oxidative stress that would otherwise exacerbate aflatoxin production by the fungus Aspergillus flavus, suggesting potential natural antifungal applications by supplementing plants with antioxidants.
