This natural edible pigment is extracted from the fresh leaves of the perilla plant, belonging to the mint family. It contains the colorants shisonin and shisolanin. The resulting amaranthine liquid pigment is water-soluble, dissolvable in alcohol and water-alcohol solutions, but not soluble in oil or pure alcohol.
The pigment’s hue and stability vary with the pH of the environment:
- pH 2.0-6.0: The pigment appears red or amaranthine.
- pH 7.0: The color shifts to blue.
- pH Above 7.0: The pigment becomes an unstable green.
