    • Cookies and Cakes: Effective concentrations range from 0.04% to 0.08%.

    Stability Considerations:

    • The pigment is sensitive to pH levels, metal ions (notably Cu²⁺ and Fe³⁺), oxidizing agents, and sunlight exposure. Ascorbic acid can protect and stabilize the pigment.
    • Best suited for acidic and low-temperature food processing, making it ideal for coloring cold foods, such as frozen desserts and cold beverages.
